I've had great luck with the Iogear GKM561R keyboard/trackball combo:

I use it on my Mac Mini with iTunes and Front Row and the multimedia keys actually control the volume, play/pause, etc. (!!). It seems to go into sleep mode quickly. To wake it up, I have to hit the shift key, then the trackball and keyboard wake up and work again.

I've also been curious about the Iogear GKM581R keyboard also:

It has contoured bottom to better lay in a lap.
