I'm assuming you want to redirect mail going to postmaster@ to another email
address, right?  If you want to change the postmaster@ address to
somethingelse@ I can't say I'd recommend that, as standard practice is to
have a _working_ postmaster@ address on your mailserver...

To redirect mail addressed to postmaster@ to, say, user
joe_blow at domain.invalid you can add a line in /etc/aliases to say something
to the affect of "postmaster: joe_blow" (by default it is aliased to root).
