How about Steganographic File Systems?  In light of some proposed
legislation which would require companies to take advanced measures to
protect customer's personal information, this has a lot of potential. 
There's also the advantage for a company to protect it's internal data
from nosey lawyers, like the White House e-mails and Microsoft
Memo's...  You could do a demonstration comparing this with some other
encryption methods.  If you need help with it just let me know.  There
are some good technical documents (in pdf format) here:
