At the hospital where I used to work, we had a farm of six or so
production VMware ESX servers on which we ran over a hundred guests.
RAM was *ALWAYS* the limiting factor on how many guest OSes we could
support on a server.  I think we had 32GB of RAM on each 8-core server
by the time I left.  CPU utilization was never an issue unless a couple
of the guests had runaway processes.
