In addition to what others have said I'll mention the "yum-security"
plugin, which you might find useful.  I know RHEL5 has it,  I'm not
sure about CentOS.  The plugin allows you to do a "yum --security
update", installing just the security updates, excluding bug and
enhancement updates.
