I do this for a couple of reasons.

1) I know the x86 kernel that boots the machine for
install works on a k7, so that is the one I install,
just to get the machine booting and working.

2) When I have a system installed with a working
kernel, I can then install other kernels. That way,
if something in the k7 kernel does not work (which has
happened to me only once), I can still boot my
machine. Now I can use Grub or LILO to get my machine
back to a working state if I botch the new kernel
install. Once I am happy with the new kernel, I then
make that the default, but still keep the old one just
in case.
