If you're not going to be doing virtual mail domains I would recommend
Courier-IMAP instead - the administration interface is much easier to deal
with.  And you don't need create the user database in duplicate/triplicate
to satisfy the needs of the Cyrus software :)  Unless you can get Cyrus to
use /etc/passwd as a user database and PAM for authentication.

I would imagine you would be able to:

* Extract data from Exchange via the ldapsearch command line tool
* Possibly edit some stuff in the resulting LDIF file
* Insert that LDIF file into the OpenLDAP directory

I don't know of anything automated.

I know of no such interface.  I'd like to hear about it if you do find one
