Not to sound like a debian lunatic, but I highly recomend debian.

I havn't personally used it yet, but a friend told me tonight that this 
netinst cd worked flawlessly:

http://people.debian.org/~ieure/netinst/

basicly it's a small (64meg) iso image that installs the base system, then 
you can apt-get/dselect whatever else you want.

need apache?

apt-get install apache

ssl compiled in?

apt-get install apache-ssl

with mod_perl?

apt-get install apache-perl

php would be nice

apt-get install php4 php4-gd php4-imap php4-pear php4-sablot

easy eh?

mysql? udmsearch? imp? awstats? mod_python? zope? proftpd? it's all a few 
keystrokes away. security updates are just as easy. I'd say debian woody 
(testing, soon to be stable) is just as stable, if not more than if you go 
<insert distro here> and installed it, or got <insert distro here> and 
compiled a bunch of stuff.

If you want a host management thing installed, I'd recomend ispman. I use 
it, and it works great. It takes a rather large amount of unix knowledge, 
if you have to ask yourself if you have that, it's probobly not for you.

Or you could see me to buy a virtual host. :)
