Besides the usual "the best way to learn it is to use it", probably the 
best book I've seen on vi is "Linux in a Nutshell".  It has a great 
section on vi commands, etc.  It's made as a reference, but you can mess 
around with it.

I've never read it (and I'm pretty experienced with vi), but O'Reilly 
has "Learning the vi Editor".  I think it's pretty much the *only* book 
on vi.
